Proxmox is a really great solution for cheap(ish) homelabs running on small intel NUC or similar mini PCs. That's how I do it personally.
For me size and electricity bills are more of a concern while on the other hand, ARM/RPi is not able to handle all the stuff I run.

Good Topic, but frankly, storage should be configured on some other system and expose the storage on NFS or iSCSI so the host server becomes from handling heavy io's. As far as possible, the storage should be on separate network interface to avoid network bottleneck.
